Single Ultrawide Monitor or a Triple Monitor Setup?

This is completely up to you. I would suggest using a single ultrawide monitor. You need to deal with bezel gaps when you hook up three monitors. If you really want to try a multi-monitor setup, you can also try using thin bezel gaming monitors to help reduce any distractions while racing.

Can I use a TV for Sim Racing?

Although TVs may seem like a good option because of their large size, they do not have higher refresh rates and low input lag like many monitors we suggested above. Most of them also suffer from low pixel density. You will not have a smooth and responsive performance in games and will be left with a bittersweet experience. For the best possible experience, monitors are the way to go.
